Knowledge and Flavours in the Serranía de las Quinchas

In the Quinchas, chonque (sweet potato), borojó (colombian fruit), nettle, squash and chicken were brought together – among many other plants – in the hands of local cooks who brought to life culinary delights; both flavorsome and attractive. Salads with orange, banana and cocoa pieces, tables decorated with yucca leaves, banana and flower petals. A true commitment to beauty, nutrition, care of the surrounding territory and life. 

On Tuesday, June 7th, the Saberes y Sabores innovation tour began in the Serranía de las Quinchas, to last four days, within the framework of the Tourist Routes through Forests and Peace project. With the help of cooks Antonuela Ariza and Marcela Arango, the community of the mountain range continues to lead the way to in sharing knowledge and use of its local products, with the deep-rooted understanding of the wonderful biodiversity of the region and the importance of nourishing one’s body and thoughts in a diverse way, strengthening the relationship with healthy and local food. 

Two workshops took place during the day. The first, The Surprise Box, established a dialogue around the unique creativity of the cooks. And the second workshop sought to encourage circular economies through the creation of products that could be taken to fairs or other marketing spaces. 

As such, the recipes are also extended to welcome tourists as a way to feed them in a balanced and conscious way. The Serranía de las Quinchas is also home to a large number of endemic species. Visiting the Serranía is truly a fortune to behold, not only because it is a powerful and extraordinary territory, but because of the warmth of the people who live there; brim full of stories and a willingness to welcome tourists into their homes. Now in possession of a newly enriched recipe book that promotes the local economy and knowledge of its territory. What a treat!
